Easy Nutritious Breakfast

Breakfast has always been the most difficult backpacking meal to figure out. I've tried oatmeal, bagels and cream cheese, grits, pancakes.  We've packed in eggs and made breakfast burritos. I've even resorted to pop-tarts on occasion. For years, I've been on a quest to find something nutritious, light weight, quick to make, and actually edible. Finally, I found the perfect thing. Sort of.

Full disclaimer: I can't stand this stuff. The texture just doesn't agree with me. If it weren't for that, it would be perfect - and Matt loves it. Just do me a favor and try it before you take it on a trip. 

So what's so great about it? It's protein and fiber-packed thanks to a healthy dose of flax meal. It's gluten and grain free if you're into that. It weighs next to nothing. Not to mention, it's something even I could manage in camp before I get my coffee in the morning. 

Ingredients:
1/3 cup Almond Flour
1/3 cup Flax Meal
2 tbsp Coconut Sugar
1/2 cup freeze-dried fruit (from Trader Joes)

Optional, to taste:
Coconut flakes 
Walnuts
Vanilla Powder

At Home: Mix all the ingredients together in a bag.

At camp: Add boiling water until it's a good consistency
